Themed Classes
Our Themed Classes are offered to our guests once or twice a month in a variety of exciting cuisines!
If you are passionate about cooking or even if you have always wanted to learn, but have never found the time, why not consider a cooking school in the beautiful and charming Texas Hill Country?
Our group classes are available all year and are characterized by its use of the freshest ingredients, prevalently from the inn’s surrounding herb garden and local farmers. Our students may participate in picking and collecting the herbs and have the certainty of always utilizing and eating 100% natural ingredients.
- Arrival at the charming Blair House Inn by 3:00 pm.
- Your first demonstration will begin with our Executive Chef in our commercial kitchen at 4:00 pm.
- You will then have time to rest before your welcome dinner in our Main Lodge.
- After dinner you participate in a short discussion with our Chef. This will include an itinerary and recipe assignments for the next two days.
- Chef will await you at 8:00 am and your first lab will begin by preparing breakfast.
- After enjoying your meal you will have a short break and return to the kitchen by 10:00am. At this time you will receive instructions and break of to prepare you assigned recipes for lunch.
- An afternoon break will be after lunch and at 3:00 pm you start to prepare your evening dinner.
- Once complete you will have a feast of the finest foods to enjoy and top the evening off.
- You will once again report to the kitchen at 8:00 am and begin breakfast preparation.
- A small break will be allowed and then you will enjoy preparing a picnic lunch to be taken to a local Texas Vineyard or Farm. You will be given a tour of the vineyard grounds and you will enjoy your prepared lunch.
- This will conclude your three day course at approximately 2:00 pm.
January 18th - 20th : Hill Country Cuisine - From wild flowers to wild game, enjoy the abundance the Texas Hill Country has to offer! Chef Sebastian will show you the secrets of preparing fresh game in such mouthwatering dishes as Molasses Grilled Wimberley Quail over Soft Polenta and Split Roasted Wild Duck with Orange Demi-Glace. Enjoy learning to make traditional Stonewall Peach Shortcakes with Poteet Blackberries Sorbet.
February 8th - 10th : Italian Cuisine - Come enjoy the taste of Italy as you prepare classic dishes such as Osso Buco Milanese, Roasted Red Pepper Risotto with Pine Nuts, and Italian Espresso Tiramisu. You'll learn traditional Italian sauces such as Fresh Basil Marinara, and Roasted Garlic Alfredo, and how to make the fresh pasta as well as wood grilled Pizza Bianca.
February 15th - 17th : New Orleans Mardi Gras - Spend 3 days & 2 nights in the beautiful Texas Hill Country while learning a variety of New Orleans cooking skills. This class will focus on the two main cuisines in and around New Orleans - Creole and Cajun - and will deliciously reflect their mix of Spanish, African, and French heritages. You will learn to prepare dishes such as award winning Gumbo, Blackened Fish Filet, Cajun Barbequed Shrimp, Cajun Marinated Roasted Loin of Pork, King Cake and the classic Beignet.
March 15th - 17th : New! Hors D'oeuvres & Tapas - The small plate of individual meals (called tapas in Spain), along with other "finger foods" from France and Italy, are prepared accompany cocktails and aperitivos. Learn to create canapes ala Julia Child, like Stuffed Olives, Shrimp in Garlic, Potato Omelettes, Ham Croquettes, Andalusian salad, and a variety of breads so entertaining at home is exciting. Come with us as we take a culinary jouney from tapas bar to tapas bar, sampling fare from Barcelona and the Mediterranean coast.
March 29th - 31st: New! Southwestern Cuisine - Increase your skills with one of the pioneers in creating Southwestern cuisine. Chef Sebastian has had a passion for indigenous southwest products since his childhood. Mouthwatering creations will consist of fantastic dishes such as a Duo of Smoked corn and roasted red bell pepper soups, Jalapeno Tabasco and Ancho rubbed chicken breast, Chipotle Fettuccine, and Grilled Catfish Enchiladas with Tomatillo Sauce. This class is sure to ignite a fire in any kitchen.
April 5th - 7th: New! Fusion Cuisine - Combine different ethnic foods to create unique culinary delicacies. You will learn to take classic French, Italian, and Asian technique and pair it with American regional products. This will include such recipes as Goat cheese stuffed Chipotle Ravioli with Cilantro Pesto, Jalapeno Buerre Blanc, Pickled Ginger and Avocado Ahi Tuna Tar tare, Southwestern California Roll, and Smoked Pork Tenderloin with Miso Demi Glace. Come enjoy the flavor explosion of different cuisines blended into one.
April 19th - 21st : Cooking with Fresh Herbs - Learn the secret of preparing tasty dishes every time by incorporating fresh herbs into your cooking. Using herbs that you harvest straight from the Blair House Herb Garden, you will be amazed by the difference these little seasoning gems can make as you prepare Garden-Fresh Carrot Soup with Mint Chiffonade & Edible Flowers, Maple & Herb Brined Pork Roast with Sauce Moutardé, and Apricot Almond Tart with Mint Coulis. Plus learn to create you own signature vinaigrette!
May 3rd - May 5th : New! Mom's Day in the Kitchen - Mom's special day doesn't have to be harried and stressful. We will show you how to plan and execute your menu in advance so all that is needed last minute are the finishing touches. Prepare Leg of Lamb with Fresh Mint Demi-glace, Slow Roasted Prime Rib with Horseradish Sauce, Potatoes Dauphinoisse, New York Style Cheesecake with Chocolate Swirl and Creamy Caramel Sauce and an Apple Pie that will become a family tradition. Come join us in the kitchen, so you can relax at home with your family and friends.
May 17th - 19th : Mediterranean Cuisine - If you can't make it to the Mediterranean this summer, let Blair House take you on a culinary tour of the region from the Strait of Gibraltar to Cypress with plenty of tasty stops along the way! You will prepare Duck Breasts with Pomegranate Walnut Sauce, Pasta, Fruits de Mer, Calamari, Baklava, Classic Greek Salad, Focaccia, Polenta and Crema Catalana. These are just a sampling of what you have to look forward to on the journey.
June 14th - 16th : Barbeque Camp! - Summer in Texas means BBQ. You'll be the envy of your friends and family once you learn the secrets to preparing wonderful meals on the grill. Try your hand at Cedar Planked Wild King Salmon with Jerk Spice and Mango Salsa, St. Louis Style Baby Back Ribs with Cherry Coke Glaze, Beer Can Chicken and Fredericksburg Peach Cobbler with Home-made Vanilla Bean Ice Cream.
Jun 28th - 30th : BBQ with Fresh Herbs - Take it to the next level! Learn the 3 methods of Barbeque; direct/indirect, smoking, & grilling. Utilizing the Blair House Inn herb garden, learn how to enhance the flavor of your meals. Prepare Snapper in Papiollte or Slow Smoked Lamb Chops, Smoked Herbed Turkey Breast, Dutch-oven Pineapple Upside Down Cake, or such favorites as Lemon Herb Buttermilk Sorbet. Enhance your summer cooking by using sure fire brines and marinades.
July 12th - 14th : Bastille Day Country French - Chef Sebastian will teach you basic French techniques that you can apply to all of your home cooking. In the process, learn how to make dishes like Steak Diane, Poulet Wellington, Chocolate Raspberry Tarts, and Chocolate Crème Bruleé. Plus Sauces Francais 101! Never again feel like recipes are written in a foreign language!

American Fall Comfort Classics - New England Clam Chowder, Butternut Squash Soup, Savory Sweet Potato Pie, Five Onion Soup, Tournedos of Beef with Burgundy Demi-glace, Roasted Garlic Mashed Potatoes and a Cherry Tart are but a few of the comforting foods we Americans crave as fall moves in with its cool crisp days and chilly nights. Get out your sweaters and scarves and prepare to fall into our class of favorite American comfort foods.
October 4th - 6th : New! Southern Italian Southern Italian Cuisine - Not only is the red checkered table cloth best associated with southern Italian cooking but also the use of fresh tomatoes and various olive oils. Experience the cuisine of Naples while preparing Seafood Puttanesca. Learn to make your own fresh pasta, prepare an antipasti platter of grilled meats and vegetables, and prepare Saltimbocca alla Romana. Discover the Greek and Moroccan influences on southern Italian cuisine while utilizing puff pastry and ice cream.

November 8th - 10th : New! American Holiday - "It ain't your grandparent's roasted turkey any more." See how adventurous you can be with the cuisine of this unique holiday. We will journey from the traditional Roasted Turkey, Candied Yams and Giblet Gravy to modern fare such as Fried Turkey Breast, Corn Maque Choux Succotash and Rhubarb-Apple pie with Lemon Basil Ice Cream and other special holiday desserts.
Dec 6th - 8th : Hill Country Holiday Feast & Baking - Get in the mood of the Holidays. Learn a variety of ways to cook turkey and side dishes. Bake holiday desserts such as Fruit Truffle, Yule Tide Christmas Log, Pumpkin Roll, Fantasy Fudge, Spice Sugar Cookies, and Santa Whiskers! Make this holiday traditional, but with a twist!
